
Mexican Lasagna
Ingredients
1 lb lean hamburger meat
1 can tomato soup
1 can rotel
1 cup water
1 8 oz block cream cheese
2 cups shredded cheddar cheese (divided)
1 egg
2 Tbs taco seasoning
1 cup refried beans
flour tortillas
sour cream (optional)
Preparation
Brown meat in skillet. Add next three ingredients to pan and simmer for 10 minutes. Mix cream cheese, a third of the cheddar cheese, egg, and taco seasoning together in a separate bowl. Cut flour tortillas into 2 inch strips (to mimic lasagna noodles).
Assemble and Bake
- In a 9×13 baking dish, spread just enough of the sauce to cover the bottom. Add a layer of tortilla strips. Spread half of cheese mixture over tortilla strips and cover with 1/3 of sauce.
- Add another layer of tortilla strips and spread refried beans over top. Sprinkle one third of the cheddar cheese over beans.
- Repeat step 1.
- Add final layer of tortilla strips and cover with remaining sauce. Sprinkle cheddar cheese on top.

I know there were a few ingredients in there that probably made you scratch your head. I wasn’t sure if it was going to turn out or not. DH could not get enough and I was VERY surprised at how tasty it was. I have already shopped for the ingredients to do it again AND I would totally serve this to company.
